Super Thin Crust Pizza, A Surprize Ingredient

It goes fast.

You can see from the picture that the old phrase,” if  you snooze you lose” really applies here. These super thin crust pizza’s have a surprise ingredient. The crust is a flour tortilla. That’s right, a tortilla!

Think about it. It’s very thin, it cooks up crispy, and it’s easy to work with, not to mention the price is right.

I make a white sauce with 1/2 cup mayonnaise, 1/2 cup grated Parmesan cheese, one bulb roasted garlic mashed, a couple of sprigs of flat leaf parsley chopped.

Then spread a few tablespoons of the white sauce, to taste, on the tortilla. Top with shredded mozzarella and an aged white cheddar, about 75/25 respectively.The cheddar really makes the cheese pop.

One of my favorite combination’s is sausage and mushroom. Get a spicy Italian sausage and brown. Slice a few mushrooms and sauté in butter for a couple of minutes, on high heat,  and finish with a short splash of a good balsamic vinegar.

Toss a handful of browned sausage and a few sautéed mushrooms on the cheese. Bake in a preheated oven set to the highest setting, normally 500-550 degrees, with a pizza stone on the lowest rack of the oven.

Very crispy crust and esay to work with.

If you don’t own a pizza stone and you’re serious about making pizza at home PLEASE buy one today if you can. You will be very pleased with the results. The stone is designed to remove moisture from the crust, thereby leaving a crisp crust.

As an extremely low-cost alternative go to your local tile store and buy four 6″ x 6″ unglazed quarry tile. When fitted together on the shelf of your oven these tiles work equally as well as a pizza stone for about 1/12 the cost.

Okay, now that you have your pizza stone or tiles well pre-heated slide the pizza on the stone or tiles and set the kitchen timer for five minutes. Check pizza and cook up to one minute longer, to desired doneness.

This produces a very thin and crispy crust creating a great texture when cooked this way. Use all your favorite toppings or what about, peach and pancetta, jalapeno peppers and onions or chorizo and chopped seeded tomato  .

One other interesting pizza we catered very successfully at DELISH was Roasted Rosemary Potato. Peel a large potato, cut into 1/4″ dice and scatter on a sheet pan, drizzle with olive oil (don’t use your best olive oil here), one tablespoon fresh Rosemary, a little salt and pepper. Roast at 350 degrees for about 30 minutes, or until tender and cool completely.

Now, on a flour tortilla with white sauce add cheese then arrange a handful of Rosemary potatoes on top and follow baking instructions.

With all variations of these thin crust pizzas finish with grated fresh Parmesan, a quick drizzle of your best olive oil and a few flakes of red pepper.

At your next party try baking these very thin crust pizzas, alternating toppings. Your guests will rave.

Remember, when YOU make it, the first ingredient is love.

  2. I couldn’t believe the result! What a quick and easy way to get the food you love! Jim told me to try it and the next day i had the ingredients and went for it. Sure enough it turned out great. My 2 year old son loved it too.
